Mushrooms in ancient Rome

The ancient Romans feasted on, you guessed it, mushrooms. Evidence of this activity has been found on three frescos in Herculaneum/Pompei.

Here is an ancient Roman recipe for mushrooms in wine and coriander.

BOLETOS FUNGOS
4 lbs mushrooms
1 bunch coriander
4 cups of caroenum (red wine, simmered until reduced by about 1/2 cup)

1. Clean mushrooms and coriander leaves.
2. Halve mushrooms if they are biggish.
3. Place mushrooms and coriander in reduced wine and simmer for 10 minutes.
4. Remove coriander.
5. Let cool and put away in the refrigerator for at least 24 hours.
